To do this, we’ve gone back to the dawn of distilling when distilling was a science not a craft.

 

THE APPLIANCE OF SCIENCE

Meet Ray, one of our founders and head distiller, a scientist who is also a graduate of the prestigious Heriot Watt International Centre for Brewing and Distilling. Our distillery has been born out of family's desire to create spirits that are based on a thoroughly scientific understanding of how different flavour compounds work and interact with each other. 

 
 

 
 

THE PROCESS

At the Dalton Distillery all our gin is made in the time honoured way, that is by redistilling a selection of natural seeds, berries, peels and barks known as ‘the botanicals’ together with high quality neutral grain spirit. We macerate this mixture for 24 hours and distil using the ‘one shot’ method. That means the stills are charged with spirit, botanicals and water to the exact proportions of the recipe. No flavour and only water is added after distillation to achieve a strength of 43% ABV, perfect for our gin. 

Our white rum is completely unique and distilled through our pot still Bridie, rectifying column and finally passing through the vapour infusion basket. Creating an incredibly smooth spirit bursting full of flavour.

We have taken our incredibly smooth rum and been maturing this spirit in carefully selected casks since April 2018, the first of their kind in the Dumfries region for well over a century. Due to the fascinating smugglers history in Dumfries, we can’t be sure if our casks are the first ever but certainly the first casks in over 100 years. Our beautiful casks consist of Oloroso and Pedro Ximenez casks, full of delightful notes of sultana and vanilla.  

We are currently working on producing a vodka using potatoes from only 2 miles away. Supporting a local farmer to take spoiled potatoes to create a smooth, crisp and pure vodka. This will be coming soon!!

 
 

 
 

THE RECIPE

Creating a gin from scratch is not easy even when you understand the science. After months of experimentation the principal botanicals selected for our flagship Oro and Oro V recipes are a combination of classic gin botanicals such as juniper of course, coriander, orris root, lemon and orange peels, and the more unusual cassia bark, Malabar cardamom, pink peppercorns and lemongrass. There’s also one other signature botanical that will forever remain secret. 

Our rum, OroRum, is produced from molasses spirit and infused with stunning botanicals including Peruvian cacao nibs, Madagascan vanilla and cinnamon, Spanish Orange from Murcia, Java pepper from Indonesia and more.

 
 

 
 

OUR STILLS

Our gins are made in traditional copper pot stills because copper is proven to chemically react with the spirit mixture to removed unwanted sulphurous or vegetal compounds. We go further however, the whole system right down to the condenser, rectifying column and pipework consists of the finest copper. We believe its this attention to detail that contributes to our spirit's cleaner, fresh taste.

Our distillery is just outside the charming village of Dalton in Dumfriesshire surrounded by some of the most beautiful countryside in all of Scotland. Not only is it where we make our very special spirits, it is where you can come and relax in The Tasting Rooms, in front of the wood burner in the winter and sit in the outside gin lounge in the summer.
